Merinque Pop Recipe
After posting a little how-to video of making some meringue pops for my kid’s parties and end of year teacher gifts, I was swamped with requests to share a recipe!
This meringue is really simple and works really well for meringue pops or kisses. Let me know if you try it!
4 egg whites
250g caster sugar
1 tsp apple cider vinegar (or white vinegar)
Preheat oven to 200℃
Beat egg whites with a whisk attachment in your mixer for 5-6 minutes.
Slowly add sugar one spoonful at a time. Add vinegar.
Keep beating until glossy stiff peaks form and sugar is dissolved (HINT: I rub a little bit of the mixture between my thumb and finger to see if it feels grainy)
Turn off mixer and sift cornflour over meringue. Fold in with a metal spoon.
Add food colouring if required.
Pipe onto lined baking trays. I use paper drinking straws as my pop sticks, you can stick them down with a small amount of meringue before piping your shapes on top. (HINT when lining your baking trays, use a small dab of meringue in each corner to hold the paper in place).
Turn oven down to 125℃, place trays in oven and bake for 30 minutes.
Turn oven off but leave the meringues in the oven to cool for at least a few hours, preferably overnight.
